Delicious & Nutritious Vegan Christmas Salad

With the holiday parties upon us, we want to indulge in holiday food, but at the same time, we want to be smart about our food choices. This Vegan Christmas salad is just what you need. A salad that can get you in the holiday spirit, without having to compromise your waistline.

This Vegan Christmas Salad has tons of nutrients, tons of flavor and it’s super easy to make if you’re pressed for time. What better way to start out your dinner than with this salad or even have it for lunch during the holiday season. Check out the recipe below from Kiwi Limon:

Ingredients

1/4 cup of orange juice

1 teaspoon of soy sauce

2 teaspoons of mustard

4 teaspoons of agave honey

1 cup of sesame oil

1 teaspoon of apple cider vinegar

2 cups of kale

2 cups of romaine lettuce

1/2 of dried cranberries

1 apple sliced

2 mandarin oranges without the skin and sliced

1/2 cup of sliced red onion

1/4 cup of walnuts

1/2 cup of pepitas or toasted pumpkin seeds

In a bowl mix the orange juice, soy sauce, mustard, agave honey, sesame oil, and apple cider vinegar and whisk until it’s well mixed together.  Once you are ready to eat, you can add the salad dressing to your mix of greens and add the rest of the ingredients as well. Set aside some additional pepitas and walnuts to sprinkle over the top of your salad.

If you don’t like walnuts you can substitute with almonds or your favorite nuts. The same for the mandarins, apples, and cranberries, there are several versions of this salad that can be made with oranges, grapes, pomegranate, spinach, and even avocado. Think about what’s available during the season and feel free to customize it with your favorite fruits and vegetables of the season.
