Pozole is a traditional Mexican dish that can be made with pork or chicken. Some people make it with a red sauce, others with a green sauce, and other’s just like to make it plain. You have options. The majority of people like the red sauce because it can be a little spicy and let’s face it who doesn’t love a colorful pozole.
Here’s what you’ll need for Red Pozole:
-Dried Ancho peppers
-Dried Guajillo peppers
-Onions
-Garlic
-Mexican oregano
-Salt and pepper
-Chicken or Bone-in Pork
-White hominy (medium can)
Cut up the protein of your choice and put in a large stock pot. Put onion, garlic, and salt and pepper to taste. Make sure the meat is cooke thoroughly. If you’d like when the meat is fully cooked, you can shred the meat with a fork or leave the bone in.
Boil the dried peppers, about 6 of each, oncee they are soft you can scrape off the soft part of the peppers and put that in the blender. This will prevent you from getting rough pieces of the pepper skin later. Some people decide to blend it with the skin on it and then put it through a colander later. Put the soft peppers that you have now in the blender along with half an onion, garlic and a pinch of oregano and blend until smooth. Once you have the sauce, add it to the chicken or pork broth that you have. Add the drained white hominy and bring to a boil. Adjust the seasoning as needed.
Once you’re ready to serve it, it’s accustomed to add shredded cabbage, finely slice radishes, pepper flakes, and lemon. Enjoy!
