Fettuccine With Chicken, Peas, and Alfredo Sauce

Eating pasta can get quite expensive at Italian restaurants, especially when you have a family of 4 or more. Yet, that doesn’t stop us from ordering it because it’s so filling and comforting. When you start looking into the ingredient list, you will find that the price of pasta at a restaurant has skyrocketed, when it’s actually very inexpensive to make at home, and even have leftovers for the next day.fettuccine alfredo

Fettuccine with chicken, peas, and Alfredo sauce is never on a healthy recipe book because it’s creamy and delicious, but we like to include recipes that make you feel happy and satisfied and this recipe certainly achieves that, plus as an added bonus, you can do it in one pot and under 30 minutes!

One Pot Chicken and Peas Fettuccine Alfredo

Ingredients
2 chicken breasts boneless and skinless sliced into medium pieces

salt and pepper to taste

1 tbsp olive oil

1 1/2 cups heavy cream

2 cups chicken broth low sodium

8 oz fettuccine

1 cup frozen peas

1 sprig basil

1 1/2 cups Parmesan cheese grated

Instructions
Season chicken generously with salt and pepper. Add oil to a Dutch Oven or a medium size pot and heat it over medium-high heat. Add chicken and brown it on all sides, but not cooked through.
 
Add garlic and sauté for a minute until fragrant. Add chicken broth, heavy cream, pasta and basil sprig. Bring to a boil, then reduce to a simmer.
Cook for about 15 to 20 minutes or until pasta is tender, stirring occasionally. When pasta is cooked to your liking add frozen peas and cook for 1 more minute. Stir in Parmesan cheese and season with salt and pepper if needed.
This recipe is so simple to make and the best part is that you can make it with the protein of your choice. Next time try it with grilled shrimp and spinach to make it healthier.
