Everybody knows that the best time to eat avocado is during the warm months. It’s an incredibly popular food that is often referred to as a superfood because of the abundant health properties. It’s incredibly nutritious, filled with tons of vitamins; it’s heart healthy, loaded with fiber and even good for your skin. There are a variety of ways you can eat and since it’s the summer we thought we would give you a couple creative ways to enjoy this tasty veggie.

Creamy Avocado Dressing
1/2 cup grapeseed or olive oil
1 tablespoon honey
1 garlic clove
1 medium avocado, peeled, pitted, and chopped
Juice of 1 lime
1/4 cup fresh orange juice
Sea salt and freshly ground black pepper
Put it in blender and puree until smooth. Mix into salad.
5 Minute Cucumber, Tomato, and Avocado Salad
Tomato Avocado Salad
1 lb Roma tomatoes
1 English cucumber
1/2 medium red onion, sliced
2 avocados, diced
2 Tbsp extra virgin olive oil or sunflower oil
Juice of 1 medium lemon (about 2 Tbsp)
1/4 cup (1/2 bunch) cilantro, chopped*
1 tsp sea salt or 3/4 tsp table salt
1/8 tsp black pepper

Spinach Avocado Apple Smoothie
1 1/2 cups of apple juice
2 cups of spinach
1 apple chopped
1/2 avocado
Blend into a smoothie.
Classic Guacamole
3 avocados mushed
1 lime juice
1/2 cup diced onion
handful of chopped cilantro
2 diced tomatoes
1 tsp of minced garlic
1/2 jalapeño pepper
Mix ingredients and mush together,
Avocado Ice Cream
2 avocados
2/3-cup cream
¼ cup of agave
Put it in the blender and freeze for a couple of hours.
