Steel cut oats: These almost look like rice that’s been cut into pieces. They take the longest to cook and have the highest amount of soluble fiber, protein and iron.
Rolled oats: These are also called old-fashioned or whole oats. These absorb more liquid and are often found in granola bars and other baked goods.
Quick oats: These are the most processed, they are pre-cooked dried and rolled and pressed thinner. They cook quicker and often look mushy.
