Heart-Healthy Vegan Avocado Ceviche
Ingredients:
- 1 ripe, fresh avocado, halved, pitted, peeled and diced
- 1 cup cauliflower, diced
- 2 tomatoes, diced
- 1/3 cup red onion, finely diced
- 1 Tbsp. jalapeño, chopped
- 1 garlic clove, minced
- 1 Tbsp. fresh cilantro, chopped
- 1 Tbsp. lime juice
- 1/4 tsp. salt
- 1 Tbsp. olive oil
Instructions:
- In a large bowl, combine avocado, cauliflower, tomatoes, onion, jalapeño, garlic, cilantro, lime juice, salt and olive oil.
- Transfer to a serving bowl. Serve with homemade pita chips.
Notes & Tips:
Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados, adjust the quantity accordingly. Serving Suggestion: Serve as an appetizer or side dish.
