Spicy and Crunchy Ceviche

One of my favorite things to eat in the summer and pretty much at any time is ceviche. Ceviche is a traditional Latin-American dish that is very delicious and you don’t have to cook anything.

There is a lot of chopping to do, but it can be done quickly or the day before, so you can get home and not have to worry about having to cook, especially on a Friday or the weekend when you just want to relax. I promise you, your family will enjoy this and this recipe will impress them.

Ingredients

1 pound peeled and deveined medium shrimp
1 cup fresh lime juice
10 plum tomatoes, diced
1 large yellow onion, diced
1 jalapeno pepper, seeded and minced
2 avocados, diced
2 ribs celery, diced
Chopped fresh cilantro, salt, and pepper to taste

Directions:

Place shrimp in a glass bowl and cover with lime juice to marinate for about an hour, or until they turn pink and opaque. Meanwhile, place the plum tomatoes, onion, jalapeno, avocado, and celery in a large glass or plastic bowl. Remove shrimp from lime juice, reserving juice.

Dice shrimp and add to the bowl of vegetables. Pour in the remaining lime juice marinade. Add cilantro and salt and pepper to taste. Toss gently to mix. Make sure you eat right away if you’re adding the avocado, otherwise it might turn brown. Enjoy!
