Make a Tomato Cucumber Avocado Salad With Ingredients From Your Garden

One of the great things about summer is the fun of harvesting fruits and vegetables from your garden that you planted. Nothing tastes better than food prepared with cucumbers, tomatoes, peppers, and other things that you grew in your back yard. If you want organic, you can’t get any closer to organic than that.

Since it’s summer, we thought we would give you an easy to do recipe where you could incorporate some of the yummy crops you’re growing in your garden. Maybe some juicy cherry tomatoes, crunchy cucumbers, and depending where you’re from, even avocados.

 

Tomato Cucumber Avocado Salad

There’s nothing easier that chopping up all your ingredients and putting them into the bowl. Cut cucumbers, cherry tomatoes, avocados, and onion into small cubes. Add minced parsley and whisk together with olive oil, red wine vinegar, black pepper and pour over salad. Toss gently so the feta and avocado don’t break up. If refrigerating, don’t add the avocado until you’re ready to eat. Enjoy this nutritious and yummy salad.
