How to Barbecue Chicken Without Burning It

Barbecuing is one of the highlights of the summer because it means hanging out with friends and family and eating fantastic food. Yet, if you don’t do it right, you can potentially ruin a good cut of meat and you don’t want your guests complaining about burnt barbecue chicken, which happens more often than you think.

Many people stick to hotdogs, hamburgers and steak when they barbeque, they skip the barbeque chicken because when they’ve grilled it in the past, they either burn it, not cook it all the way through, or it gets dry. But, there are easy steps that you can take in order to avoid dry burnt chicken with no flavor other than charcoal.

How To Grill Perfect BBQ Chicken

Choose wisely

One of the first things you have to think about what cuts you like best. If you want juicy chicken, skip the breasts because those are the most dry. Legs and thighs are your best option because they have a little fat and are usually the most tender.

Lock in the flavor

One of the biggest mistakes is to leave the entire flavor of the chicken to the bbq sauce. The fact is that if you want delicious flavorful chicken, you have to add a good spice rub before it hits the grill.

Spice Rub Recipe

½ cup of brown sugar

½ cup of paprika

1 tablespoon of ground black pepper

1 tablespoon of salt

1 tablespoon of chili powder

1 tablespoon of onion power

1 tablespoon of garlic powder

1 teaspoon of cayenne pepper

Grilling

When grilling chicken you have to make sure your temperature is just right. If you are using a charcoal grill, you can’t really test how hot your grill is, but one of the things you can do is take a look at the charcoal. Your high heat is located at the center where you see those charcoals that are bright red. The first you need to do is oil your grill, which will prevent your chicken from sticking. Grab a paper towel and dip it in vegetable oil and grease the grill. 

 

Then place the chicken skin side down on the high-heat part of your grill and let it cook. Check after a couple of minutes and flip it to the other side, if it’s sticking do not flip it just yet. Once you have some nice grill marks on both sides of your chicken, you can move it to the edges of the grill where the heat is not as intense so that it can continue cooking all the way through. Once your chicken is cooked you can add your liquid barbecue sauce and place it back on the indirect heat for a couple of minutes until it is caramelized. That way it won’t burn and it will be juicy and flavorful.
