Quinoa Easy To Make Salad With Black Beans, Corn, and Avocado

Quinoa is the cool new grain in town, or is it? It’s actually NOT a grain, but a seed harvested from a plant called goosefoot. It’s more close to spinach, than to rice, but many people think it’s a grain because when it’s cooked just like rice. It’s  a super food because it’s low in fat, rich in fiber and has proteins like zinc, folate, potassium, plus it’s gluten-free. It might feel funny in your mouth when you first try it because of its rich texture, but it’s pretty delicious and easy to make.

Quinoa Salad

 

½ cup of quinoa

1 cup of cherry tomatoes sliced in half

1 avocado sliced in cubes

¼ cup of cilantro

2 tsp of diced onion

2 lemons

Pinch of salt and black pepper to taste

1 cup or cooked corn, preferably fresh

1 cup of black beans

Olive oil

Preparation: Cook the quinoa with water and a little bit of salt. Once it’s cooked, set aside and let it cool. Whisk oil, limejuice and olive oil in a bowl. Add the corn, tomatoes, black beans, quinoa, onion, and cilantro together and mix in with the dressing. Refrigerate for half an hour to make sure all the flavors have had time to mix and enjoy. Pair it with some grilled chicken or fish and you have yourself an easy to make salad that is not only delicious but packed with tons of nutrients.
