Recipes for Lent Under $10

The vast majority of Hispanics in the U.S. are Catholic, roughly over 50%. During Lent season, there is a period of fasting, repentance, and spiritual discipline. It’s a time for reflection and also a time where they abstain from eating meat on Fridays. When you’re used to including some type of protein on a daily basis it’s difficult to think of creative ways not to eat meat. Here’s a few tasty, easy, and very affordable recipes:

Mushroom Crust-less Quiche

2 tsp. of butter

2 cups of sliced mushrooms a

Reduced fat sour cream

4 eggs

Onion & garlic

Pinch of salt and pepper

Cheese

1tsp. heavy whipping cream

¼ cup of flour

Cook mushrooms, onions, garlic and salt with a little bit of butter and set aside. Place sour cream, eggs, cheese, flour, and pepper and mix in blender or whisk thoroughly. Place mushrooms inside mixture and stir. Pour into a pie dish and bake for 45 minutes.

Tuna Burgers

2 cans of tuna

2 eggs

1 shredded carrot

Seasoned bread crumbs

1 onion

2 tsp. of parsley

1 pinch of cayenne pepper

Olive oil

Salt & Pepper

Mix tuna, eggs, carrot, breadcrumbs, onion, parsley, and cayenne, add salt and pepper. Grease skillet with olive oil and cook burgers. Serve on hamburger buns.

 

Poblano Pesto Pasta

4 poblano peppers

½ cup of cilantro

Garlic

Salt and pepper

Garlic and onion

Olive oil

½ cup of 2% milk

¼ package of Cream cheese

Boil pasta with olive oil, drain, but leave ¼ of the amount of liquid in the pot. Char poblano peppers and place in a plastic bag; once they’ve cooled, remove the charred skin. Remove seeds and blend with cilantro, onion, cream cheese, milk and garlic to create pesto. Add pesto to pasta and bring to a boil.
